Churro Muchkins (Donut Holes)

1 cup Almond Flour

1/4 cup Vanilla protein powder (I used birthday cake Pro which is 2 scoops)

1-1/4 tsp Baking powder

1 tsp. Xanthan gum

1 tsp. Cinnamon

1/2 tsp. Salt 

2 tbsp. Sour cream

2 tbsp. Butter, melted 

2 tbsp. Hot water


Churro Coating

2 tsp. Cinnamon

1/3 cup Swerve Sugar

4 tbsp. Butter, melted

1. Preheat oven 325

2. Mix all dry ingredients in a medium bowl.

3. Add in all wet ingredients and mix until combined. (Dough will be sticky)

4. Spray cookie sheet with coconut oil or whichever spray you prefer to use.

5. Roll into 1/2-1 inches dough doughs. Placing about an inch apart on a cookie sheet.

6. Bake for 6-8 mins

7. Melt butter for coating when there is about 2 minutes left on timer.

8. In a separate bowl mix together cinnamon and sugar.

9. Once munckins are cooled drop into butter, then roll into cinnamon sugar mixture. Repeat until all have been coated. 

10. Store in airtight container. 

Note- I sprayed my hands with my coconut oil, it made it much easier to roll the dough.
