Keto Cheese Cake
Ingredients:
Cake Base • 100 g flax seed flour (you may also use almond flour, it makes the base stickier though)
• 125 g butter
• 50 ml unsweetened almond milk
• 40 g erythritol
• 1 tsp baking powder
Topping (you can also double this portion)
• 250 g cottage cheese/quark
• 2 eggs
• 10 g blancmange powder vanilla
• 40 g erythritol
Instructions:
For the base: Melt the butter with the erythritol until it dissolves; add all ingredients and mix well. Preheat the oven (175°C), put the base in a round cake tin and bake for approx. 10 min.
For the topping: Wisk up the erythritol with the eggs, then add the rest of the ingredients. Put the topping into the base and bake for another 15-25 minutes (until it turns slightly brown).
Note: quark/cottage cheese and blancmange powder are quite common in Europe; I'm not entirely sure how you could substitute this if these things are not available. Possibly cream cheese for the quark? I'm definitely not sure about this though - so if anyone works their way around this, feel free to add the info!
